September 25, 2020This recipe is Vegan – Vegetarian – Gluten Free – Dairy Free – Egg Free and Diabetic friendly.
I have been obsessed with this Spicy Salsa now for weeks and have been adding it onto so many different meals. Two of my favourite ways to enjoy this spicy salsa is over a crispy tortilla or burger.
Ingredients:
1 Can (400g) – Chopped and Peeled Tomatoes or (4 fresh Roma Tomatoes)
3-4 Tbsp.’s (70g) – Tomato Paste
1/2 – 1 Tsp (2-4g) – Garlic Powder
1 – 1 1/2 Tsp (3g) – Dried Oregano
1 Tsp (0.5g) – Dried Mixed Herbs
1 Tsp (2g) – Ground Coriander Powder
1/2 Tsp (3.5g) – Paprika
1/4 – 1/2 Tsp (2.5g) – Salt
1 Tsp (5g) – Sugar
1 Tsp (5ml) – Vinegar
1/2 Tbsp. (7.5ml) – Coconut Oil
1/2 – 1 Tbsp. (7.5 – 15ml) – Hot Sauce (or according to your own taste)
Pinch to 1/4 Tsp – Cayenne Pepper (Optional)
Method:
• Add all the ingredients into a saucepan and simmer on a medium heat for about 15 – 20min.
• Enjoy warm or cold.
Makes about 1.5 cups.
Method for Tortilla:
• Preheat your oven to 180˚C/350˚F and lay your tortilla wrap on a baking tray lined with parchment paper. Bake the tortilla for about 7min or until it is lightly browned.
• Spread your tortilla with mashed avocado or a delicious guacamole (Click for recipe).
• Add lettuce of your choice, cherry tomatoes, beans and then add your spicy salsa and top it off with plain yogurt or sour cream.
• You can also enjoy it over a burger.
