August 16, 2019This recipe is Vegan – Vegetarian – Gluten Free – Dairy Free and Egg Free friendly.
This Peanut Butter and Banana Muffins/Loaf recipe has 2 versions, a vegan/egg free version as well as a vegetarian option.
Ingredients: Vegan/Egg Free Option
1 1/2 Cup (165g) -Rolled Oats Flour (Gluten Free if necessary)
1 Tsp (7g) – Baking Powder
1 Tsp (7g) – Baking Soda
1/4 Tsp (1g) – Salt
1 Cup (250g) – Banana Pulp
1/4 Cup (70g) – Peanut Butter
1/4 Cup (60ml) – Maple Syrup or Honey
1 Tsp (5ml) – Vanilla Essence
1 Tsp (5ml) – Apple Cider Vinegar
1/4 Cup (60ml) – Milk of your choice (I use unsweetened Almond Milk)
Optional:
• 1/4 Cup (35g) – Peanuts
Ingredients: Vegetarian Option

1/4 tsp (1g) – Salt
1 Cup (250g) – Banana Pulp
1/4 Cup (70g) – Peanut Butter
1/4 Cup (60ml) – Maple Syrup or Honey

2 (60g each) – Eggs
Optional:
• 1/4 Cup (35g) – Peanuts
Method:
• Preheat your oven to 180˚C/350˚F.
• Add all the dry ingredients into a mixing bowl and whisk it trough.
• In a separate bowl, mix all the wet ingredients together and pour it over the dry ingredients. Mix everything well.
• For muffins, divide the batter into muffin cups or for a loaf, line a medium loaf tin with parchment paper and pour the batter inside.
• Sprinkle the peanuts over the muffins/loaf.
• Baking time will vary depending on the size of the muffin cups. For the big muffins as seen on these images you can bake them for approx. 20-25 minutes. If the muffin cups are smaller you will have to test with a testing pin after about 12-15 minutes.
• For the loaf, the baking time will be approx. 30-35 minutes. For best results test the loaf with a testing pin after 30 minutes.
• Enjoy.
Makes about 5 large muffins or 1 medium loaf.

I made the vegan option and it was delicious, first time trying peanut butter in a banana bread recipe and yum, could easily eat the dough unbaked lol Thank you Rozaan for posting the step by step photos I found that very helpful.
