This recipe is Vegan – Vegetarian – Gluten Free – Dairy Free – Egg Free – Paleo – Keto and Diabetic friendly.
This delicious Berry Coulis (Puree/Sauce) brings so much flavour to almost any dessert or breakfast Parfait. Not only does it requires 3 ingredients, it is also quick and easy to make.
1 Cup (150g) – Berries or of your choice
1-2 Tbsp. (15g – 30g) – Sweetener of your choice (I use Xylitol or Erythritol)
1/2 Tbsp. (7.5ml) – Lemon Juice
• Add all the ingredients into a sauce pan and bring to a boil.
• Simmer on a low to medium heat for about 15minutes or until the fruit is nice and soft.
• Use an electric hand stick blender or a food processor if you don’t have one and blend the fruit smooth.
• If the fruit has pieces of skin and you want it to be smooth just drain and press the pulp through a sifter.
• Let cool and enjoy.
I enjoy my coulis over yogurt and granola, smoothies and baked pies.
Makes about 1/2 Cup.
