Peach Jelly (Vegan)

November 21, 2017This recipe is Vegan – Vegetarian – Gluten Free – Dairy Free – Egg Free – Keto – Paleo and Diabetic Friendly.
Not only does this Veggie Rice add colour and a mixture of flavour to any dish, but if you are on a low card diet and love your veggies, well then this is a whole new way of making rice exciting and fun.
Ingredients:
200g – Broccoli
200g – Cauliflower
150g – Carrots
1/2 Cup (70g) – Peppadews (Piquanté Peppers) or Bell Peppers or Capsicums
Fresh Garlic or Garlic powder to taste
Himalayan Salt/Kosher Salt to taste
Freshly ground Black Pepper to taste
Optional:
Spicy Seasoning (I like to add Sriracha Seasoning)
Method:
• Add all the ingredients to food processor and blend into rice size pieces.
• Heat some coconut oil in a skillet, add the veggie rice, season it and fry it on medium to high heat for about 10 minutes or until the rice has reached your liking.
Serves 3-4 (as a side dish.)
