Caramel Popcorn (Peanut Butter)

If you are a fan of almonds then you have to try these delicious Almond Snicker Bars. They are really easy to make, just watch the video and see for yourself.
Ingredients: Base
Part 1
1 Cup (150g) – Almonds
1/2 Cup (75g) – Dates, pitted
2 Tbsp. (14g) – Cocoa Powder
1 Tbsp. (15ml) – Coconut Oil, melted
Pinch of Himalayan Salt or Kosher Salt
Part 2
1/4 Cup (70g) – Almond Butter
1 Tbsp. (15ml) – Maple Syrup or Honey
1 Tbsp. (15ml) – Coconut Oil
Ingredients: Caramel Layer
1/2 Cup (140g) – Almond Butter
1 Tbsp. (15ml) – Maple Syrup or Honey
1 Tbsp. (15ml) – Coconut Oil
Ingredients: Chocolate Coating
125g – Chocolate of your choice
1/2 – 1 tsp (2.5 – 5ml) – Coconut Oil (optional)
Method: Base
Part 1
• Add all the ingredients in a food processor and blend through.
Part 2
• Add all the ingredients together and microwave for about 5 second, then mix through. Be careful not to leave it too long, you only want the coconut oil to melt.
• Add the almond butter mixture to the almond and date mixture and blend through until it forms a dough.
• Line a 18x18cm (7 x 7 inch) square bowl with parchment paper. I don’t have one so I used 2 x mini loaf pans (18cm in length x 9.5cm in width x 6cm in height).
• Add the dough and press it firm.
Method: Caramel Layer
• Add all the ingredients together and microwave for about 5 second, then mix through. Be careful not to leave it too long, you only want the coconut oil to melt.
• Cover the base with the caramel and allow to set in the freezer for at least 3 hours.
• When the time is right remove the parchment paper with the almond base and caramel layer and cut it into equal sized bars.
Method: Chocolate Coating
• Melt the chocolate.
• You can add the coconut oil if you want the chocolate to be a bit more runny.
Be careful not to add too much coconut oil, you want to keep the chocolate to its original form as much as possible so it won’t melt easy after it has set again.
• Dip the almond bars into the melted chocolate. (You can use a fork to balance them on or you can spoon the chocolate over the bars).
• Try and work as fast as you can, the almond bars can melt quick and start to break or crumble.
• Let the chocolate set while leaving them on a cooling rack, you can speed up the process by placing the bars in a refrigerator.
Makes about 10 Almond Snicker Bars
